food revolution

I am on a food revolution.

I’ve startred to go vegetarian and am flirting with going vegan (no animal products at all).

My last meal (that included meat) was on the 4th of July.

I have had dairy (which, for me, is harder to kick than meat because you know, ice cream, butter, cheese all are DAIRY!). But I am drinking rice milk on my cereal and trying out vegan cheeses and coconut milk frozen treats.

I began reading the book The Kind Diet and it really made sense to me. My convictions about the environment, animals, and health all are starting to align.

This is a personal journey and I know there will be bumps and hiccups along the way but I’ve decided that is going to be okay!  I am learning about new foods and flavors and definitely thinking outside the box.

So far, my body is thanking me!

You probably already know this, BUT my favorite summer drink is a Mojito!  They are refreshing on a hot summer night and have just the right amount of sour and sweet.

Here is the simple recipe I use:

2/3 c. simple syrup
3/4 c. spearmint
1 c. fresh lime juice
1 1/2 c. rum
3 c. cold club soda

Make simple syrup by bringing to boil 1/3 c. sugar & 1/3 c. water. Put in fridge to cool. Loosely pack the mint leaves into a measuring cup. Then break up the mint to release the oils, I usually just use a bowl and spoon. Freshly squeeze the limes because let’s face it, fresh is best. Be prepared because you will need 12-15 limes for 1 cup fresh lime juice.

Fill bottom 1/4 of pitcher with ice, add simple syrup, mint, lime, rum, and club soda – stir and enjoy!

i am baking a pumpkin pie today

Roasted the pie pumpkin a few weeks ago.

Pureed and froze it in Ziplocs.

And today it is time.  Time to bake my first pie from a real pumpkin.

Update – Used these recipes for pie and for crust. So far so good – pie is baking in the oven!
